A friend of mine, Julie Byers, posted on her blog ( http://inexplicableways.wordpress.com/) a recipe for some delicious granola bites. They are so absolutely scrumptious, easy to make and healthy. My kind of snack! Thanks Julie for sharing.
Chop and set aside:
1/4 C oats
2 tbsp flax seeds
2 tbsp nuts
In large bowl, mix:
1 1/2 C quick oats
2/3 C dried fruit
1/3 C pumpkin seeds
2 tbsp raw sunflower seeds
2 tbsp shredded coconut
1 tsp cinnamon
1/2 C nut butter of your choice
1/4 C honey
1/2 tsp vanilla
With moist hands, roll above mixture into 1 inch balls. Roll balls in set aside crumb mixture.
Refrigerate overnight. Delicious!!!!!
